Book excerpt: Artistic, yes that's what cooking is all about, its an art, to some it comes naturally while others need to be specially trained. I'm one of those lucky ones, to me it was second nature,. My mom was my mentor and my instructor, I have gained my inspiration for cooking from her from a very young age, her passion for cooking infused in me a greater passion to experiment with ingredients. She taught me the art of blending, marinating and eventually obtaining that special flavour to each dish. I would have loved to include more recipes but due to constraint of space I had to limit myself. However, I have tried to include as many of the standard recipes and some special ones that I'm sure you are going to enjoy. Most of my recipes are pretty simple and to make it easier in your measurements I have used teaspoons, grams or cup measurements. All the ingredients used are easily available at all Indian stores all over the world. Most of my recipes serve 4 to 6 people just taking into account that the meal would be shared by a group of people. All these recipes have been tried and tested with years and years of experience. I am sure you will enjoy this book and experiment with these recipes. Happy Cooking Joan Peters
